An all-in-one oven-baked ratatouille in a Dutch oven, with chickpeas for extra protein and goat cheese to finish it off. Perfect for weekday lunches.

Welcome to Office Lunch, episode 2! A ratatouille that’s perfect as fall rolls in: put it in the oven, forget about it, and get other things done in the meantime. Gabcooks style: simplified, no fuss.

Eggplant isn’t for everyone. If you don’t like it, just use more zucchini. In the video I make a double batch, so it’s a big quantity. The rest goes into lunches (or the freezer).

For me, the goat cheese is what makes this recipe. Seriously, add it.

Serving suggestion: over orzo, topped with crumbled goat cheese and fresh basil.
