Instructions

  1. Marinade. Combine the meat with the citrus juice, beer, garlic, cilantro and spices. Refrigerate at least 20 minutes.
  2. Tortillas. Mix the flour, salt and baking powder. Add the oil and hot water. Knead 5 to 10 minutes, until the dough springs back.
  3. Divide into 16 balls, flatten and cover with a damp towel.
  4. Salsa. Oil the salsa ingredients and grill on the barbecue until charred. Pulse in a blender with salt and pepper, keeping some texture.
  5. Roll the tortillas between two sheets of parchment. Cook over medium-high until bubbles form, then flip. Keep warm in a towel.
  6. Steak. Grill over high heat 4 minutes per side. Wrap in foil, rest 10 minutes, then slice.

Citrus-and-beer marinated beef, grilled tomatillo salsa and homemade flour tortillas to take your taco night to the next level.

Welcome to my kitchen! We’re making a citrus-beer beef marinade, a tomatillo and hot pepper salsa, and trying our hand at homemade tortillas.

Gab’s note: in the video I was following two recipes at once and forgot a cup of flour. You do need all three.

Toss the leftover citrus in a pitcher of ice water for a little infused water to serve with the tacos.
