## Ingredients

- 5 cups all-purpose flour (600 g)
- 2 tsp salt
- 2 cups very cold unsalted butter, in ½-inch cubes (454 g)
- 1 cup ice-cold water (238 g)

## Instructions

1. **Pastry.** Mix the flour and salt. Work in the very cold butter with your fingertips, leaving crumbs and bits of butter.
2. Add the ice-cold water and gather into a ball without overworking. Wrap and refrigerate 30 minutes to 1 hour.

## Notes

The all-butter pastry I use for my [freezer apple pies](/en/recipes/apple-pie/). Keep everything very cold and stop mixing while you can still see bits of butter.
